I have seen so many people use cauliflower for things you would never have thought to try a few years ago...pizza crust for one, and have you seen that picture of a slow roasted head of cauliflower? NEVER would have thought to do that! And it looks so good!!
Well, my husband can't eat broccoli anymore (food sensitivities/allergies) and loves creamy broccoli cheese soup. We also love a good creamy potato soup, but so much starch there!
So I decided to try making a healthier creamy soup with cauliflower. IT.WAS.AWESOME! My 15 year old had FOUR helpings kind of awesome! It even tasted cheesy, but had no cheese in it.
I thought it perfect to share for this super cold weather we have had this week and are expecting more of. There are really minimal ingredients too. So, here you go.
1 large head of caulifower (or two smaller ones)
2-3 quarts water
1 package Turkey Bacon
1 cube beef or chicken bouillion or 1 cup broth
1 cup plain Greek yogurt
2-3 T butter/margarine (or healthy butter substitute)
2-3 tsp of Italian seasoning
A dash of Mrs. Dash
salt and pepper to taste
Directions:
Cut up your cauliflower and place in pot with water and seasonings and broth. Bring to a boil. Boil under cauliflower is soft. Remove from heat.
Cook bacon on stovetop while cauliflower is boiling. Cut into little pieces and add to the cauliflower and water mixture.
Use a potato masher to mash up the cauliflower as much as you can in the soup.
Add the yogurt and butter and mix on low/med with a mixer.
Salt and pepper to taste.
Such an inexpensive and easy soup that is pretty darn good AND pretty healthy as well!

Looks and sounds delish! Can't wait to try it. Suggestions for substitution for the yogurt so that it's dairy-free?
You could make a white sauce with almond milk or even just add some almond milk to make it creamier and use corn or tapioca starch for thickening. Good luck!
