It's going to be a great year!
And to start it off right, I have a great new recipe for you with some great natural sweetener options!
I don't know about you, but after all the sweets that I have been surrounded by the last few weeks, er...months...haha...I am ready to change my diet and feel better! My family and I try really hard to limit the amount of sugar and calories that we eat and try to eat clean. Well, this recipe is a great one to help you switch over to a natural sweetener by using Truvia in your baking. It is great for reducing calories (since it's a Zero-Calorie sweetener!!), and it tastes great! It doesn't have that different "after-taste" (in my opinion), that some others have as well. I absolutely loved it in this new muffin recipe I came up with!

Now, for that recipe!
Apple Cinnamon Oatmeal Muffin Recipe
Ingredients:
2 cups almond milk (or milk of your choice)
2/3 cup oil
4 eggs
1 1/2 tsp vanilla
4 1/2 cups flour
3/4 cup Truvia
1 tsp baking soda
2 tsp cinnamon
2/3 tsp sea salt
Dash of cloves
2 1/2 tsp baking powder
1 cup oats
3 apples
Topping:
1 cup apples (grated or small chunks)
1 cup oats
1/2 stick butter
1 tsp cinnamon
1/4 cup Truvia
Recipe Instructions:
You want to begin by peeling some apples (I used 3 medium sized Honeycrisp apples.) Then either grate the peeled apples or cut them into tiny chunks.
First, throw in your wet ingredients: eggs, vanilla, milk, and oil and mix.
Then, add your dry ingredients:
Mix together, then add 2/3 of your apples (Save about a cup of them for the topping),
and mix yet again:
The last thing you want to mix together is the topping. Mix all topping ingredients together in a separate bowl. (I love the handy little spout that comes on the Truvia!)
Spray your muffin pans with olive oil (or your choice), scoop into muffin pans, add a bit of topping to each and bake for 18 minutes at 350 degrees in the oven.
Soooo yummy!
I like to know more about what we are actually putting into our bodies as well, so I thought I'd let you know a bit more about Truvia. Truvia is made from the best tasting-art of the stevia leaf and comes in several different blends. Whether you are looking for a baking blend, a brown sugar blend, etc, they've got it. I love incorporating it into my baking and am able to have so many less calories in my baking this way.
Along with cutting down our calories and sugar intake, our family doesn't drink coffee and is taking out soda as well this year. BUT...we love some herbal tea in our house and we found a great combination of flavors in Bigelow tea, that we all love. It's the perfect combination for a warm, filling breakfast for our kids! All of these good habits we are forming will continue to aid our family in eating better. Which in turn affects everything in our daily life...moods, attitudes, healthy living, etc. I love how much better our family runs when we eat better.
