How many of you eat cereal JUST for breakfast? No, I don't mean, do you eat cereal for lunch and dinner also. haha (Although I can't say that I never have done that before!) BUT...other than making your traditional marshmallow treats, have you ever thought to use cereal to make something else? I hadn't much until recently and I am addicted!
I set out to Walmart to pick up some ingredients to make a new, warm afternoon snack for my kids. With the wind and the real feels in the negatives lately, I am in the mood to bake and serve them something warm when they come home from school. I wanted something that would fill them up and give them some needed protein too though, so I thought I would grab some cereal to use in a new recipe.
The only problem I had in gathering my ingredients was that I had a hard time choosing from so many yummy combinations among Quaker® cereals, that I had a hard time choosing just one. I love your traditional granola in Quaker® Simply Granola, but I also love the combinations (like Cherry Almond Pecan found in Quaker® Real Medleys®. And then there still are my kids favorites with Quaker® Life and in Quaker® Oatmeal Squares (especially the brown sugar!). No matter which one you like of Quaker® cereals, you can find it at and all the ingredients you need for these recipes at Wal-Mart. Needless, to say I grabbed several and had a couple of ideas for a warm snack for them. So, you get a two for one deal today! haha Two recipes in one post. They both turned out so good, I have to share!
I got home and had my little(r) ones help me as I started making some these Cocoa Roasted Caramel Almond Bars. Then as they were baking, I started making ANOTHER recipe with the Cherry Almond Pecan Quaker® Real Medleys®. I had seen this variety at the store and immediately knew it would be great with an apple crisp, so that's what I made! I'm not sure what I like more, the smell of the Cherry Almond Pecan Apple Crisp baking, or actually eating it. Heaven!
So, here are your recipes of the day!
Cherry Almond Pecan Apple Crisp
Ingredients:
1 cup flour
2 tsp cinnamon
2 tsp nutmeg
Aprox. 6 peeled and sliced apples
1 cube softened butter
1 cup brown sugar
Instructions:
This recipe is soooo easy!
Peel and slice your apples. Grease a 9x13 pan, and put your sliced apples across the bottom.
Sprinkle the mixture made above over the apples and bake at 375 degrees for 30 minutes.
Serve warm OR cold. (It's great with ice cream too, especially with pumpkin spice ice cream as shown in the pics above and below, but not quite as warm that way. lol)
(This is a dry, crunchy like "granola bar" recipe. If you want it more moist or chewier, try adding applesauce, a cup or so of mashed banana, and/or eggs to the recipe before baking. It's also great to make a batch, cut into squares, and store for later.)
And now for the 2nd recipe of the day!
Cocoa Roasted Caramel Almond Protein Squares
Ingredients:
2 cups Quaker® Oatmeal Squares
(You may want to put these in a food processor to make them blend better.)

2 cups Quaker® Simply Granola
1 cup Cocoa Roasted Almonds
1 cup Caramel Almond Butter
1 tsp cinnamon
1/4-1/3 cup honey
2 scoops your choice of Protein Powder
(I used one scoop of vanilla and one scoop of chocolote.)
This is an easy peasy recipe as well! You just dump everything into a bowl and turn over/stir all ingredients.
Grease a 9x9 pan and pour in your mixture.
Spread and pack down in the pan.
Then drizzle a bit of honey over the top and bake at 250 degrees for 15ish minutes.
After they come out of the oven and cool, drizzle a bit of chocolate over the top (if desired) and cut into squares.

They both turned out so good and are so different from each other! And both from cereal! So if you're wanting something different, whether it's in a little extra snack with some added protein, OR a sweet, warm snack, head out and pick up some Quaker® cereals to make an afternoon snack with.
