Minion Lemon Bars Recipe #MinionMovieNight

How many of you remember my fun DIY sock minion I posted awhile back? (You can find it here.)  It's been a favorite at our house and also one of my top pinned posts. How can you NOT love those fun little yellow guys?! Well, I have a super fun and easy minion recipe for you today! 



 Did you know that Illumination Entertainment's Minions movie was just released on DVD/Blu Ray on 12/8/15? It was one of my kids' top summer movies they saw this past year and my kiddos were so excited to be able to watch it again! In fact, it's been minion madness at our house lately with these fun little guys. My girls were super excited to pick up this DVD/Blu Ray combo pack. We even found one with this cute little minion water bottle included. (Now, who gets to use it first?! haha)

You're definitely going to want to pick one up for yourself!  (Because again, how can you NOT smile and laugh with those lovable little guys!?) And while you're at it, if you have little ones at home as excited about getting Minions as mine wereyou could even include them in the search and make it into a treasure hunt game!

In fact, that's how I came up with this new fun little treat/recipe I want to share with you today. We needed something to snack on for our family Minions movie night and these minion lemon bars were perfect! Easy to make, they don't take long to mix up OR to bake, and they're great for the kids to help make them along with you. And you can't forget that they are sooo sooo yummy!

So, here's the recipe!


Minion Lemon Bars Recipe

 Mix together: 
1 cup flour 
(or sometimes I do half flour and half oats to add a bit of protein)
1/4 cup real butter
1/4 cup coconut oil
1/4 cup powdered sugar


Press down in an 8x8 or a 9x9 pan and bake at 350 degrees for 20 minutes. 


While that is baking, mix together the following:
1 cup sugar 
(you can substitute half of this for stevia for a lower amount of sugar)
2 T lemon juice OR a couple drops of lemon essential oil
1/2 tsp baking powder
1/4 tsp salt
2 large eggs
(Optional: I also added a couple drops of yellow food coloring to make it even more bright. I wanted a bit bolder yellow for a more minion look.)

Mix above ingredients for a couple minutes until light and airy. 


Then pour over the hot crust when it comes out of the oven and continue baking for another 20-25 minutes.


Let your lemon bars cool and add a light sprinkling of powdered sugar over the top. You don't want to cover up all of the yellow though, so keep it light.


Now you're ready to create your minions!
Take a table knife and cut out a minion-like shape...basically a rectangle with curved corners. 


Grab you some candy eyes and some gel frosting and draw on your overalls and your goggles around the eyes. 


OR you can also use printable edible paper if you would rather. Last thing you need to add is a cute little smile...or frown. haha Either way they come out adorable and so yummy! 


We had smiles all around at our house!
