I am always trying new things to make recipes work with Gluten Free flours...and still be yummy! Because, let's face it. Not all Gluten Free recipes are created equally good. haha (Understatement, huh?)
Well, I made this recipe with both regular ingredient flours and sugars and then with Gluten Free flours and natural sweeteners and was thoroughly impressed at the GF turn out. Not going to lie...Still not as fluffy and light as the others, but the flavor and texture was still sooooo good! In fact, I preferred it to the other. I call them pinwheels, bc they aren't fluffy enough (to me) to be like a traditional cinnamon roll. So, here's the recipe. You've got to try them though! So good! (And my kids ate them up!)
Gluten Free Cinnamon Pinwheels (with Natural Sweetener)
Mix 1 T yeast and 1/4 cup warm water. Add a pinch of your natural sweetener. Let the yeast mixture sit and rise, while you mix the rest.
3/8 cup shortening ( 1/4 cup plus 1/8 cup...I use organic or I use coconut oil sometimes as well)
1/2 cup hot milk
Mix the above together until shortening is melted OR melt ahead of time.
Add:
1 egg
3/8 cup Organic coconut palm sugar
1/2 cup cold water
2 1/2 ripe bananas
Mix again. Then add the yeast mixture from above.
Add
3 3/4 cups Gluten Free flour
1 tsp salt
Cover. Let it sit in room temperature or a warm area and let it rise until doubled in size.
After you have it all mixed up and you have let the dough rise, roll the dough out to about a 1/4" thick. Spread some butter on the dough lightly, then spring cinnamon and a sweetener of your choice. I chose Organic Coconut palm Sugar for this one because it is closer to brown sugar, than Stevia or Truvia mixes.
Then start to roll the whole thing up (above).
After you have it all in one long roll, take some string and "cut" each roll with the string. I cut mine each about 3/4 inch thick. Lay onto your cookie sheet and pat down on top just a smidge. Bake at 350 degrees for about 12 minutes.
They turn out soft and have a great texture. Not crumbly like so many GF recipes. Moist and somewhat dense, but not too dense. And love the cinnamon flavor.
They are honestly so good that they don't even need a frosting, BUT...if you're looking for one, I tried two different things that were equally good. One was a super cream coconut yogurt that I topped one of the pinwheels with, and the other was a Caramel Cream Cheese frosting that I whipped up! Also so good (and that last one was also done with natural sweeteners, so better for you too!)
Caramel Cream Cheese Topping
1 regular size brick of cream cheese
1-2 T almond milk
1-2 T Stevia
1 tsp liquid caramel flavoring
Mix all together until smooth! The caramel cream cheese smell alone, is soooo good!
So there you have it! Perfect for an afternoon snack or occasional treat. I bagged mine up in individual bags and put several in the freezer for another day.
